Happy Memorial Day Week

Hope you are safe from the storm in the Gulf. I have been busy lots of social events which is a nice break. Had lunch with some of my High School Sisters yesterday. Had a great time. The menu is short this week as we will be eating out of the freezer. You know 6 servings and you only ate two. FREEZE FREEZE thats the ticket.

one sugar free vanilla pudding cups , 1/4 c. pumpkin, 1/4 tsp pumpkin pie spice in a small bowl with apple wedges. (sweet Treat)

Blackened Better Than Ever Shrimp Quesadillas (Use Wild Caught Not Farm Raised)
Page 199 Obsessed 4 points Make your own or buy OLE Extreme wellness high fiber Tortilla 1 point. (Walmart)

Just a not you will have left overs freeze portions for those quick lunches . actually my Zucchini Soup, Lentil Soup and Fajita Vegetables are all freezer portions.

Bake or grill chicken breasts for the week, good for salads, snacks, chicken salad (load it with chopped apples and celery for crunch, and just chicken)

Grocery store find this week, Hunts makes a reduced sugar ketchup really good.
